Recipes: George Washington’s “Hoe Cakes”

George Washington reportedly liked hoe cakes (cornmeal pancakes), often served with butter, honey.   

The Ingredients

  • Cornmeal   
  • Salt   
  • Egg (optional)   
  • Water (lukewarm)   
  • Butter or suet for frying; honey or molasses to serve 

The Process

  1. Mix cornmeal, salt, egg (if using), and water to make a batter of a pancakelike consistency.   
  2. Heat a griddle or skillet, grease with butter or suet.   
  3. Drop spoonfuls of batter and cook until firm and browned on both sides.   
  4. Serve hot, with butter, honey or molasses.
